This single-serve pumpkin mug cake is a cozy fall treat, baked right in your microwave with warm spices and moist pumpkin puree for an indulgent yet quick dessert.

  • 1/4 cup almond flour
  • 2 tbsp maple syrup
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • pinch salt
  • 1/4 cup canned pumpkin puree
  • 2 tbsp milk
  • 1 tbsp coconut oil
  • 1/2 tsp vanilla extract
  • all spice
  • cloves
  • dark chocolate chips

Instructions

  1. In a microwave-safe mug, whisk together 1/4 cup all-purpose flour, 2 tablespoons granulated sugar, 1/4 teaspoon baking powder, 1/4 teaspoon baking soda, 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, and a pinch of salt.
  2. Stir in 1/4 cup canned pumpkin puree, 2 tablespoons milk, 1 tablespoon vegetable oil, and 1/2 teaspoon vanilla extract until smooth.
  3. If desired, top with a few chopped pecans or chocolate chips.
  4. Microwave on high for 1 minute 30 seconds to 2 minutes, or until the cake rises and is set in the center; do not overcook.
  5. Let cool for 1 minute, then enjoy straight from the mug with whipped cream or ice cream if desired.
