Easy Chicken Fried Rice

- 2 cups jasmine rice
- 3 tbsp vegetable oil
- 1 lb diced boneless, skinless chicken breasts
- 1 tsp salt
- 0.5 tsp pepper
- 1 cup diced onion
- 1 cup diced carrots
- 1 cup frozen peas
- 3 pcs eggs
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 0.5 cup chopped green onions
Instructions
- Cook 2 cups of jasmine rice according to package instructions; allow it to cool.
- Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat.
- Add 1 pound of diced boneless, skinless chicken breasts to the skillet; season with salt and pepper.
- Cook the chicken for about 5-7 minutes or until golden brown and cooked through; remove and set aside.
- In the same skillet, add another tablespoon of oil if needed, then add 1 cup of diced onion and sauté until translucent.
- Stir in 1 cup of diced carrots and 1 cup of frozen peas; cook for another 3-4 minutes until vegetables are tender.
- Push the vegetable mixture to one side of the skillet and pour in 3 beaten eggs; scramble until fully cooked.
- Add the cooked rice and chicken back to the skillet; mix thoroughly with the vegetables and eggs.
- Pour in 3 tablespoons of soy sauce and 1 tablespoon of sesame oil; toss everything to combine evenly.
- Taste and adjust seasoning with more soy sauce or pepper as desired.
- Garnish with chopped green onions and serve hot.
