Classic Egg Fried Rice

A simple, quick, and delicious staple featuring fluffy jasmine rice stir-fried with beaten eggs and aromatic green onions.

  • 2 cups cooked jasmine rice (cold & day-old)
  • 1 unit green onion (finely chopped)
  • 2.5 tbsp regular soy sauce
  • 0.5 tbsp sesame oil
  • 4 unit large eggs (beaten)
  • 2 tbsp vegetable oil

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.
  2. Add the beaten eggs to the pan and scramble them until just set, then remove from the pan and set aside.
  3. Add the remaining 1 tablespoon of vegetable oil to the same pan.
  4. Add the cold, day-old jasmine rice and stir-fry for 2-3 minutes, breaking up any clumps.
  5. Pour the soy sauce and sesame oil over the rice, tossing well to coat evenly.
  6. Return the cooked eggs to the pan and mix thoroughly with the rice.
  7. Stir in the chopped green onions and cook for another minute until fragrant.
  8. Serve immediately while hot.

Notes

Using day-old, cold rice is the secret to perfect fried rice as it prevents the grains from becoming mushy. If you don't have day-old rice, spread freshly cooked rice on a baking sheet and freeze it for 15-20 minutes to dry it out.
