Homemade Granola

- 4 cups oats
- 2 cups nuts/seeds of your choice
- 1 pinch salt
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- 1/3 cup olive oil
- 1/2 cup honey or maple syrup
- 1/2 tsp vanilla extract
Instructions
- Preheat your oven to 325 degrees F (150°C) and line a large baking sheet with parchment paper.
- In a large bowl, combine the oats, nuts or seeds, salt, cinnamon, and nutmeg. Mix well to distribute the spices evenly.
- In a small bowl, whisk together the olive oil, honey or maple syrup, and vanilla extract until smooth.
- Pour the wet ingredients over the dry mixture. Stir thoroughly until everything is evenly coated—the mixture should be wet and glistening but not soggy or pooling with liquid. If it seems too dry, add a tiny bit more oil or syrup; if too wet, add a handful more oats.
- Spread the mixture in an even layer on the prepared baking sheet, pressing it down slightly for larger clusters if desired.
- Bake for 25-30 minutes, stirring halfway through, until golden brown and fragrant. Watch closely to avoid burning.
- Remove from the oven and let cool completely on the baking sheet (about 30 minutes). It will crisp up as it cools. Break into clusters and store in an airtight container.
