Ma Po Tofu
Ma Po Tofu
A quick, savory stir‑fry that pairs juicy ground pork with tender tofu, all coated in a fragrant black‑bean sauce and a hint of heat.
Ingredients
Ingredients
- 1 tbsp olive oil
- 2 medium tofu, drained and cut into ½‑inch cubes
- 0.8 lb ground pork
- 2 tbsp black bean sauce (particulate)
- 1.5 tsp garlic, minced
- soy sauce
- chili sauce
- 2 scallions, chopped
Instructions
- Heat the olive oil in a large skillet over medium‑high heat.
- Add the minced garlic and stir‑fry for about 1 minute until fragrant.
- Add the ground pork, breaking it up with a spatula, and stir‑fry until it begins to brown, then stir in 2 tbsp black‑bean sauce and continue cooking for a few minutes.
- When the pork is nearly cooked through, add the tofu cubes, toss gently to coat, and drizzle additional black‑bean sauce as needed; stir in the chopped scallions and a splash of chili sauce to taste.
- Season with soy sauce to taste, then cover the pan and simmer for 2–3 minutes until the pork is fully cooked and the tofu has absorbed the flavors.
- Serve hot over steamed rice or noodles, garnished with extra scallions if desired.
Notes
Press the tofu briefly after draining to remove excess moisture; this helps it brown better and absorb the sauce.
