Ma Po Tofu

25m
4 servings

A quick, savory stir‑fry that pairs juicy ground pork with tender tofu, all coated in a fragrant black‑bean sauce and a hint of heat.

Ingredients

Ingredients

  • 1 tbsp olive oil
  • 2 medium tofu, drained and cut into ½‑inch cubes
  • 0.8 lb ground pork
  • 2 tbsp black bean sauce (particulate)
  • 1.5 tsp garlic, minced
  • soy sauce
  • chili sauce
  • 2 scallions, chopped

Instructions

  1. Heat the olive oil in a large skillet over medium‑high heat.
  2. Add the minced garlic and stir‑fry for about 1 minute until fragrant.
  3. Add the ground pork, breaking it up with a spatula, and stir‑fry until it begins to brown, then stir in 2 tbsp black‑bean sauce and continue cooking for a few minutes.
  4. When the pork is nearly cooked through, add the tofu cubes, toss gently to coat, and drizzle additional black‑bean sauce as needed; stir in the chopped scallions and a splash of chili sauce to taste.
  5. Season with soy sauce to taste, then cover the pan and simmer for 2–3 minutes until the pork is fully cooked and the tofu has absorbed the flavors.
  6. Serve hot over steamed rice or noodles, garnished with extra scallions if desired.

Notes

Press the tofu briefly after draining to remove excess moisture; this helps it brown better and absorb the sauce.
