Ingredients

  • 100 g starter
  • 325 g warm water
  • 10 g salt
  • 500 g flour of any kind

Instructions

  1. Feed starter in 1:2:2 ratio ~8 hours in advance
  2. Combine ingredients (measurements don’t have to be perfect!)
  3. 3-4 stretch and folds every 20-30 minutes
  4. Proof overnight (8-12 hrs) at room temp, then shape (and add inclusions at this point if desired)
  5. Cold proof in banneton for 4 hrs-3 days
  6. Bake at 450-475° depending on vibes for ~20 min covered, then 20-25 min uncovered until desired color is reached!
