- 100 g starter
- 325 g warm water
- 10 g salt
- 500 g flour of any kind
Instructions
- Feed starter in 1:2:2 ratio ~8 hours in advance
- Combine ingredients (measurements don’t have to be perfect!)
- 3-4 stretch and folds every 20-30 minutes
- Proof overnight (8-12 hrs) at room temp, then shape (and add inclusions at this point if desired)
- Cold proof in banneton for 4 hrs-3 days
- Bake at 450-475° depending on vibes for ~20 min covered, then 20-25 min uncovered until desired color is reached!
