Roast Beef and Parmesan Toastie on Hokkaido Mascarpone Bread
This indulgent sandwich features tender, slow-roasted chuck beef layered with nutty Parmesan cheese on soft Hokkaido mascarpone bread, then fried to crispy perfection.

- 1 lb chuck roast
- 4 slices hokkaido mascarpone bread
- .5 cup parmesan cheese
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
Instructions
- Dry brine a chuck roast steak. Season generously with salt and place on a drying rack in the fridge for 24h
- Sear the chuck roast with garlic powder, salt and pepper. Add white wine and cover to bring to temp
- Transfer the roast to a food processor and pulse until blended into small, chunky pieces
- Lay out 2 slices of Hokkaido mascarpone bread and spread the blended roast beef and Parmesan cheese evenly
- Top with the remaining 2 slices of bread to form sandwiches.
- Heat a skillet over medium heat and fry each sandwich for 3-4 minutes per side until golden brown and cheese is melted.
