Roast Beef and Parmesan Toastie on Hokkaido Mascarpone Bread

This indulgent sandwich features tender, slow-roasted chuck beef layered with nutty Parmesan cheese on soft Hokkaido mascarpone bread, then fried to crispy perfection.

  • 1 lb chuck roast
  • 4 slices hokkaido mascarpone bread
  • .5 cup parmesan cheese
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder

Instructions

  1. Dry brine a chuck roast steak. Season generously with salt and place on a drying rack in the fridge for 24h
  2. Sear the chuck roast with garlic powder, salt and pepper. Add white wine and cover to bring to temp
  3. Transfer the roast to a food processor and pulse until blended into small, chunky pieces
  4. Lay out 2 slices of Hokkaido mascarpone bread and spread the blended roast beef and Parmesan cheese evenly
  5. Top with the remaining 2 slices of bread to form sandwiches.
  6. Heat a skillet over medium heat and fry each sandwich for 3-4 minutes per side until golden brown and cheese is melted.
