  • 2 1/2 cups rolled oats
  • 1 cups all-purpose flour
  • 1 cups brown sugar
  • 6 tbsp unsalted butter
  • 2 eggs
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 1/4 tsp pumpkin spice mix
  • 1 cups chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment, letting the overhang for easy removal.
  2. Whisk together the flour, rolled oats, baking powder, salt, and pumpkin spice mix in a large bowl.
  3. Whisk together pumpkin puree, brown sugar, eggs, vanilla extract, and melted butter in a separate bowl until smooth.
  4. Fold the wet mixture into the dry ingredients and stir until just combined; avoid overmixing to keep bars tender.
  5. Fold in the chocolate chips until evenly distributed through the batter.
  6. Spread the batter into the prepared pan in an even layer.
  7. Bake for 25–28 minutes, or until the edges are golden and a toothpick inserted into the center comes out with a few moist crumbs.
  8. Cool the pan on a wire rack for at least 20 minutes to set.
  9. Lift the bars from the pan using the parchment overhang and transfer to a cutting board.
  10. Cut into 12 even squares and arrange on a serving platter.
  11. Store leftovers in an airtight container at room temperature for up to 4 days, or freeze for longer storage.
