- 1 cups chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment, letting the overhang for easy removal.
- Whisk together the flour, rolled oats, baking powder, salt, and pumpkin spice mix in a large bowl.
- Whisk together pumpkin puree, brown sugar, eggs, vanilla extract, and melted butter in a separate bowl until smooth.
- Fold the wet mixture into the dry ingredients and stir until just combined; avoid overmixing to keep bars tender.
- Fold in the chocolate chips until evenly distributed through the batter.
- Spread the batter into the prepared pan in an even layer.
- Bake for 25–28 minutes, or until the edges are golden and a toothpick inserted into the center comes out with a few moist crumbs.
- Cool the pan on a wire rack for at least 20 minutes to set.
- Lift the bars from the pan using the parchment overhang and transfer to a cutting board.
- Cut into 12 even squares and arrange on a serving platter.
- Store leftovers in an airtight container at room temperature for up to 4 days, or freeze for longer storage.
