  • 2 sweet potatoes
  • 1 lb ground beef
  • 2 cups corn kernels (fresh or frozen)
  • 2 avocados
  • 1/4 cup fresh cilantro
  • 1 jalapeño
  • 2 limes (plus extra for garnish)
  • 2 tbsp olive oil
  • 1 taco seasoning
  • 1 tsp chili powder
  • to taste salt
  • to taste black pepper
  • 1.5 cup cottage cheese
  • 1 tbsp mayonnaise
  • 1 green onion
  • tajin

Instructions

  1. 2 diced potatoes in oven at 425F for ~25mins or until fork tender.
  2. In a skillet over medium heat, brown 1 lb ground beef with taco seasoning packet for 8-10 minutes until cooked through; drain excess fat and keep warm.
  3. In a bowl, combine 2 cups corn kernels, 2 diced avocados, 1/4 cup chopped cilantro, 1 diced jalapeño, juice of 2 limes, 2 tbsp olive oil, cottage cheese, mayonnaise, salt, and lots of Tajin, and pepper; mix gently to create the sauce.
  4. Divide cooked potatoes into 2 bowls, top each with 1/2 of the beef, then spoon corn-avocado mix over the beef.
  5. Garnish each bowl with a lime wedge and extra cilantro if desired; serve immediately.
