- 2 sweet potatoes
- 1 lb ground beef
- 2 cups corn kernels (fresh or frozen)
- 2 avocados
- 1/4 cup fresh cilantro

- 1 taco seasoning
- 1 tsp chili powder

Instructions
- 2 diced potatoes in oven at 425F for ~25mins or until fork tender.
- In a skillet over medium heat, brown 1 lb ground beef with taco seasoning packet for 8-10 minutes until cooked through; drain excess fat and keep warm.
- In a bowl, combine 2 cups corn kernels, 2 diced avocados, 1/4 cup chopped cilantro, 1 diced jalapeño, juice of 2 limes, 2 tbsp olive oil, cottage cheese, mayonnaise, salt, and lots of Tajin, and pepper; mix gently to create the sauce.
- Divide cooked potatoes into 2 bowls, top each with 1/2 of the beef, then spoon corn-avocado mix over the beef.
- Garnish each bowl with a lime wedge and extra cilantro if desired; serve immediately.
