- 4 cups seedless watermelon
- 4 oz feta cheese
- 1/2 small red onion
- 1/4 cup fresh mint leaves
- 2 tbsp lime juice
- 2 tbsp extra-virgin olive oil

Instructions
- Cut the watermelon into 1-inch cubes and place in a large serving bowl.
- Thinly slice the red onion and add to the bowl with the watermelon.
- Chop the fresh mint leaves and crumble the feta cheese, then add both to the bowl.
- In a small bowl, whisk together the lime juice, olive oil, salt, and pepper to make the dressing.
- Pour the dressing over the salad ingredients and gently toss to combine.
