- Place a small dollop (about 1 tsp) of goat cheese into each pitted date, pressing gently to fill the cavity.
- Drizzle each stuffed date with a few drops of honey and sprinkle with black pepper and chopped thyme.
- Wrap each date with a half‑slice of prosciutto, securing the seam with a toothpick if needed.
- Arrange the wrapped dates seam‑side down on the prepared baking sheet.
- Bake for 4–5 minutes, until the prosciutto is crisp and the cheese is warm.
- Remove from the oven, let cool for a minute, then serve warm or at room temperature.
Notes
If you prefer a less salty bite, rinse the prosciutto briefly under cold water and pat dry before wrapping. Toothpicks are optional but help keep the prosciutto in place during baking.
