- Combine the ground beef, eggs, grated Parmesan, diced onions, steak spice, and salt in a large bowl.
- Mix gently with your hands until just combined; avoid over‑mixing to keep the meatballs tender.
- Portion the mixture into 1‑inch‑wide balls (about 24 meatballs) and place them evenly on the prepared sheet.
- Drizzle the tops with a thin layer of olive oil to encourage browning, if desired.
- Bake for 15‑18 minutes, turning halfway through, until the meatballs are deep golden and an internal temperature of 160°F is reached.
- If you like a crispier finish, switch the oven to broil for the last 2 minutes, watching closely to prevent burning.
- Remove from the oven, let rest 5 minutes, then serve hot with marinara, crusty bread, or over pasta.
Notes
For extra crispness, broil the meatballs for the final 2 minutes; they’ll develop a caramelized crust without drying out.
