Oven‑Roasted Parmesan‑Steak Spice Meatballs

Juicy beef meatballs packed with salty Parmesan and a bold steak‑spice blend, baked to a caramelized crust at 425°F.

  • 2.6 lb ground beef
  • 2 large eggs
  • 0.75 cups grated parmesan cheese
  • 2 yellow onions, diced
  • 1.5 tbsp steak spice
  • 1 tsp salt

Instructions

  1. Preheat the oven to 425°F and line a rimmed baking sheet with parchment paper.
  2. Combine the ground beef, eggs, grated Parmesan, diced onions, steak spice, and salt in a large bowl.
  3. Mix gently with your hands until just combined; avoid over‑mixing to keep the meatballs tender.
  4. Portion the mixture into 1‑inch‑wide balls (about 24 meatballs) and place them evenly on the prepared sheet.
  5. Drizzle the tops with a thin layer of olive oil to encourage browning, if desired.
  6. Bake for 15‑18 minutes, turning halfway through, until the meatballs are deep golden and an internal temperature of 160°F is reached.
  7. If you like a crispier finish, switch the oven to broil for the last 2 minutes, watching closely to prevent burning.
  8. Remove from the oven, let rest 5 minutes, then serve hot with marinara, crusty bread, or over pasta.

Notes

For extra crispness, broil the meatballs for the final 2 minutes; they’ll develop a caramelized crust without drying out.
