A bright, protein‑rich salad that balances buttery avocado, tangy goat cheese, and silky smoked salmon with a sweet‑balsamic finish.

  • 4 cups mixed greens
  • 1 avocado, ripe and sliced
  • 1 tomato, ripe and diced
  • 4 tbsp goat cheese, crumbled
  • 4 oz smoked salmon or lox, thinly sliced
  • 2 tbsp extra‑virgin olive oil
  • 1 tbsp balsamic glaze
  • salt
  • freshly ground black pepper

Instructions

  1. Toss the mixed greens in a large bowl to loosen them.
  2. Add the sliced avocado and diced tomato, then gently toss again to distribute.
  3. Scatter the crumbled goat cheese over the greens and arrange the smoked salmon strips on top.
  4. Drizzle the olive oil and balsamic glaze, then season with salt and freshly ground black pepper to taste.
  5. Serve immediately, optionally garnished with a sprinkle of fresh lemon zest for extra brightness.

Notes

For an extra pop of flavor, add a pinch of finely grated lemon zest just before serving.
