  • 1/4 tsp vanilla extract
  • 2 tbsp plain greek yogurt
  • 1 tbsp coconut oil
  • 4 tbsp almond flour
  • 2 tbsp unsweetened cocoa powder
  • 1/4 tsp baking powder
  • pinch salt
  • 1 tbsp dark chocolate chips
  • cinnamon

Instructions

  1. In a small bowl, combine the coconut oil, almond milk, vanilla extract, and Greek yogurt. If the coconut oil is solid, microwave the bowl for 10-15 seconds to melt it; whisk until combined.
  2. In a separate bowl, mix the oat flour, cocoa powder, baking powder, and a pinch of salt.
  3. Stir the dry ingredients into the wet mixture until just combined; fold in the chocolate chips if using.
  4. Pour the batter into a microwave-safe mug and microwave on high for 1-2 minutes, until the center is set but still moist.
  5. Let cool for 1 minute before enjoying straight from the mug.
