Braised Short Rib Vietnamese Style

- 2 lb short ribs
- 1/3 cup soy sauce
- 1/4 cup fish sauce
- 2 tbsp sugar
- 4 cloves garlic
- 1 tbsp five-spice powder
- 2 tbsp vegetable oil
- 1 medium onion
- 2 tbsp ginger
- 1 tbsp chili paste
- 3 cups beef broth
- 2 cups water
- 1/4 cup fresh cilantro
- 2 pieces sliced chili
Instructions
- Prepare the marinade by mixing soy sauce, fish sauce, sugar, garlic, and five-spice powder in a bowl.
- Marinate the short ribs in the mixture for at least 2 hours or overnight in the refrigerator.
- Preheat a large pot or Dutch oven over medium-high heat and add vegetable oil.
- Sear the marinated short ribs on all sides until browned, about 5-7 minutes per side.
- Remove the short ribs from the pot and set aside.
- In the same pot, add chopped onions and sauté until translucent, about 3-4 minutes.
- Stir in ginger and chili paste, cooking for another minute until fragrant.
- Return the short ribs to the pot and add beef broth and water to cover the meat.
- Bring the mixture to a boil, then reduce heat to low and cover the pot.
- Simmer for 2.5 to 3 hours, until the short ribs are tender and falling off the bone.
- Check periodically and add more water if the liquid level gets too low.
- Once cooked, remove the ribs and strain the braising liquid, discarding solids.
- Reduce the braising liquid over medium heat until slightly thickened, about 10-15 minutes.
- Serve the short ribs with the reduced sauce, and garnish with fresh cilantro and sliced chili as desired.
- Pair with steamed rice or noodles to soak up the delicious sauce.
