Braised Short Rib Vietnamese Style

This flavorful dish features tender, braised short ribs infused with traditional Vietnamese spices and herbs. Perfectly served over rice or noodles, it's a comforting meal that showcases the rich culinary heritage of Vietnam.

  • 2 lb short ribs
  • 1/3 cup soy sauce
  • 1/4 cup fish sauce
  • 2 tbsp sugar
  • 4 cloves garlic
  • 1 tbsp five-spice powder
  • 2 tbsp vegetable oil
  • 1 medium onion
  • 2 tbsp ginger
  • 1 tbsp chili paste
  • 3 cups beef broth
  • 2 cups water
  • 1/4 cup fresh cilantro
  • 2 pieces sliced chili

Instructions

  1. Prepare the marinade by mixing soy sauce, fish sauce, sugar, garlic, and five-spice powder in a bowl.
  2. Marinate the short ribs in the mixture for at least 2 hours or overnight in the refrigerator.
  3. Preheat a large pot or Dutch oven over medium-high heat and add vegetable oil.
  4. Sear the marinated short ribs on all sides until browned, about 5-7 minutes per side.
  5. Remove the short ribs from the pot and set aside.
  6. In the same pot, add chopped onions and sauté until translucent, about 3-4 minutes.
  7. Stir in ginger and chili paste, cooking for another minute until fragrant.
  8. Return the short ribs to the pot and add beef broth and water to cover the meat.
  9. Bring the mixture to a boil, then reduce heat to low and cover the pot.
  10. Simmer for 2.5 to 3 hours, until the short ribs are tender and falling off the bone.
  11. Check periodically and add more water if the liquid level gets too low.
  12. Once cooked, remove the ribs and strain the braising liquid, discarding solids.
  13. Reduce the braising liquid over medium heat until slightly thickened, about 10-15 minutes.
  14. Serve the short ribs with the reduced sauce, and garnish with fresh cilantro and sliced chili as desired.
  15. Pair with steamed rice or noodles to soak up the delicious sauce.
