Chocolate Chip Skillet Cookie

Almond butter chocolate chip cookie skillet. Gluten free.

  • 1/2 cup creamy unsweetened, unsalted, and all-natural almond butter
  • 1/3 cup melted coconut oil
  • 1 cup coconut sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 1/2 tsp vanilla extract
  • 1 cup finely ground blanched almond flour
  • 3/4 tsp baking soda
  • pinch fine sea salt
  • 3 oz semi-sweet chocolate chips (plus more for the top)
  • 3 oz chopped dark chocolate (plus more for the top)
  • flaky sea salt, for topping

Instructions

  1. Whisk together the melted coconut oil, one egg and one egg yolk, almond butter, coconut sugar, and vanilla extract. Mix until well combined.
  2. Then add almond flour, baking soda, and salt and mix well. The batter gets really thick FYI!
  3. Then add the chocolate chips and chocolate chunks to the bowl and mix.
  4. Transfer the cookie dough to the prepared skillet.
  5. Use a rubber spatula or the back of a spoon to spread out the dough and press it into an even layer in the skillet.
  6. Sprinkle some extra chocolate chips and chunks on top if you’d like!
  7. Bake the cookie skillet for 17–22 minutes at 350 degrees until the edges are golden brown and the center is set.
