Juicy ground turkey simmered in chunky salsa makes quick, flavorful tacos that pair perfectly with a simple side of seasoned rice.

  • 0.75 lb ground turkey
  • 1 tsp olive oil
  • 0.75 cups chunky salsa
  • salt
  • black pepper
  • 8 hard taco shells or soft tortillas
  • 2 cups shredded lettuce
  • 1 cups diced tomatoes
  • 1 cups shredded cheddar or mexican blend cheese
  • 2 cups cooked rice (white or brown)

Instructions

  1. Heat the olive oil in a large skillet over medium‑high heat.
  2. Add the ground turkey and break it up with a spatula, seasoning with a pinch of salt and pepper.
  3. Cook, stirring occasionally, for 8–10 minutes until the turkey is fully browned and no pink remains.
  4. Tilt the pan and spoon out any excess liquid or oil, then stir in the chunky salsa.
  5. Reduce the heat to medium‑low and simmer the mixture for 2–3 minutes until the salsa is warmed through.
  6. While the turkey simmers, prepare the rice according to package directions, stirring in a spoonful of salsa for extra flavor if desired.
  7. Shred the lettuce, dice the tomatoes, and have the shredded cheese ready.
  8. If using hard taco shells, place them on a baking sheet and bake at 325°F for 3–5 minutes until warm and crisp.
  9. Spoon the warm salsa‑turkey mixture into each taco shell or tortilla.
  10. Top each taco with shredded lettuce, diced tomatoes, and a generous sprinkle of cheese.
  11. Serve the tacos alongside the seasoned rice and enjoy immediately.

Notes

For extra flavor, stir a spoonful of salsa into the rice while it cooks; it adds a subtle kick and keeps the rice moist.
