Turkey Tacos with Rice

- 2 cups shredded lettuce

- 1 cups shredded cheddar or mexican blend cheese
- 2 cups cooked rice (white or brown)
Instructions
- Heat the olive oil in a large skillet over medium‑high heat.
- Add the ground turkey and break it up with a spatula, seasoning with a pinch of salt and pepper.
- Cook, stirring occasionally, for 8–10 minutes until the turkey is fully browned and no pink remains.
- Tilt the pan and spoon out any excess liquid or oil, then stir in the chunky salsa.
- Reduce the heat to medium‑low and simmer the mixture for 2–3 minutes until the salsa is warmed through.
- While the turkey simmers, prepare the rice according to package directions, stirring in a spoonful of salsa for extra flavor if desired.
- Shred the lettuce, dice the tomatoes, and have the shredded cheese ready.
- If using hard taco shells, place them on a baking sheet and bake at 325°F for 3–5 minutes until warm and crisp.
- Spoon the warm salsa‑turkey mixture into each taco shell or tortilla.
- Top each taco with shredded lettuce, diced tomatoes, and a generous sprinkle of cheese.
- Serve the tacos alongside the seasoned rice and enjoy immediately.
