Miso Glazed Cod

- 4 pieces cod fillets
- 1/4 cup miso paste
- 2 tablespoons rice wine vinegar
- 2 pieces garlic cloves
- 1 inch fresh ginger
- 2 tablespoons maple syrup
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, whisk together 1/4 cup of miso paste, 2 tablespoons of rice wine vinegar, 2 minced garlic cloves, 1 inch of grated fresh ginger, and 2 tablespoons of maple syrup until smooth.
- Place 4 cod fillets in a baking dish and pour the miso glaze over them, ensuring they are well coated.
- Let the cod marinate for at least 30 minutes for enhanced flavor.
- Line a baking sheet with parchment paper and place the marinated cod fillets on it.
- Bake in the preheated oven for 12-15 minutes or until the fish flakes easily with a fork. 140 internal temp
- Remove the cod from the oven and let it rest for a couple of minutes.
- Serve the miso glazed cod with lemon wedges on the side.
