Baked cod fillets glazed with a rich miso sauce, providing a harmonious balance of umami and sweetness, enhanced with garlic and ginger.

  • 4 pieces cod fillets
  • 1/4 cup miso paste
  • 2 tablespoons rice wine vinegar
  • 2 pieces garlic cloves
  • 1 inch fresh ginger
  • 2 tablespoons maple syrup

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, whisk together 1/4 cup of miso paste, 2 tablespoons of rice wine vinegar, 2 minced garlic cloves, 1 inch of grated fresh ginger, and 2 tablespoons of maple syrup until smooth.
  3. Place 4 cod fillets in a baking dish and pour the miso glaze over them, ensuring they are well coated.
  4. Let the cod marinate for at least 30 minutes for enhanced flavor.
  5. Line a baking sheet with parchment paper and place the marinated cod fillets on it.
  6. Bake in the preheated oven for 12-15 minutes or until the fish flakes easily with a fork. 140 internal temp
  7. Remove the cod from the oven and let it rest for a couple of minutes.
  8. Serve the miso glazed cod with lemon wedges on the side.
