Classic Sweet Corn Fritters
These golden, crispy corn fritters are a delightful treat made with a blend of creamed and whole kernel corn, lightly sweetened with honey.
Ingredients
Ingredients
- 1 cups all-purpose flour
- 1.5 tbsp baking powder
- 0.75 tsp salt
- 1 cups cream style sweet corn
- 1 unit large egg
- 2 tbsp honey
- 1 tbsp butter, melted
- 0.5 cups frozen corn, thawed
- 4 cups oil for frying
Instructions
- Pour about 4 inches of oil into a deep pot or Dutch oven and heat to 350°F.
- Whisk together the all-purpose flour, baking powder, and salt in a large mixing bowl.
- Stir in the cream-style corn, egg, honey, and melted butter until well combined.
- Fold in the thawed frozen corn kernels.
- Drop spoonfuls of the batter carefully into the hot oil, working in batches to avoid overcrowding.
- Fry for 3 to 4 minutes, turning occasionally, until the fritters are deep golden brown.
- Remove the fritters with a slotted spoon and drain on a wire rack or paper towels.
- Serve warm, optionally topped with extra honey or a dusting of powdered sugar.
Notes
Ensure your oil stays at a consistent temperature to prevent the fritters from becoming greasy. If you prefer a savory version, you can omit the honey and add a pinch of black pepper or cayenne.
