Salmon Ochazuke

A light, homey, healthy salmon ochazuke bowl with steamed white rice, green onions, seared salmon, seaweed, homemade furikake, green‑tea dashi, and a dollop of wasabi. From justahumblecook on Instagram.

  • some steamed white rice
  • lots green onions
  • salmon fillet
  • seaweed (nori)
  • more green onions
  • homemade furikake
  • green tea dashi
  • a little dollop wasabi

Instructions

  1. Steam the white rice until fluffy.
  2. Prepare the green‑tea dashi using the dashi packs according to package instructions.
  3. Thinly slice the green onions.
  4. Season the salmon fillet and sear it in a hot pan until cooked through.
  5. In each serving bowl, place a portion of the steamed rice.
  6. Top the rice with a generous amount of sliced green onions, the seared salmon, and pieces of seaweed.
  7. Add more green onions on top, sprinkle with homemade furikake, and pour the hot green‑tea dashi over the bowl.
  8. Finish with a small dollop of wasabi.
