- 1 pint cherry tomatoes

Instructions
- Prepare the balsamic reduction by combining balsamic vinegar in a small saucepan over medium heat; bring to a boil, then reduce heat and simmer until thickened to a syrupy consistency, about 8-10 minutes; set aside to cool slightly.
- Season both sides of the chicken breasts generously with salt and black pepper.
- Heat olive oil in a large skillet over medium-high heat until shimmering.
- Add the chicken breasts to the skillet and sear for 5-6 minutes per side, until golden brown and cooked through to an internal temperature of 165°F; remove from skillet and transfer to a plate.
- While chicken rests, slice the fresh mozzarella into 1/4-inch thick rounds and halve the cherry tomatoes.
- Place the cooked chicken breasts back into the skillet or on a baking sheet; top each breast with 2-3 slices of mozzarella and a handful of halved cherry tomatoes.
- Return the skillet to low heat, cover, and allow the cheese to melt for 1-2 minutes, or broil briefly if using a baking sheet until bubbly.
- Drizzle the balsamic reduction over the topped chicken breasts.
- Garnish with fresh basil leaves torn or whole.
- Serve immediately with a side of crusty bread or greens for an impressive date night meal.
