Mexicorn Dip
A creamy and zesty dip featuring sweet mexicorn mixed with spicy peppers, sharp cheddar, and fresh green onions, ideal for dipping tortilla chips at parties or game days.
Ingredients
- 2 cans mexicorn
- 1 cup sour cream
- 1 cup mayonnaise
- 3 green onions
- 1 can chopped green chiles
- 1/2 jar jalapeño peppers
- 10 oz shredded cheddar cheese
Instructions
- Drain the mexicorn and set aside.
- In a large mixing bowl, combine the sour cream and mayonnaise until smooth.
- Add the drained mexicorn, chopped green onions, chopped green chiles, chopped jalapeño peppers, and shredded cheddar cheese to the bowl.
- Stir all ingredients together until well combined and evenly distributed.
- Cover and refrigerate for at least 30 minutes to allow flavors to meld, or serve immediately with Frito scoops.
