Fall Harvest Crockpot Chili
A cozy, hearty autumn chili featuring the sweetness of tender sweet potatoes and the zesty kick of jalapeños and chili-lime seasoning.
Ingredients
Ingredients
- 1.5 lb ground beef
- 2 cups sweet potatoes, peeled and cubed
- 7.5 oz black beans, drained and rinsed
- 7.5 oz pinto beans, drained and rinsed
- 28 oz diced tomatoes
- 1 cups yellow onion, diced
- 2 tbsp jalapeños, seeded and minced
- 2 tbsp chili-lime seasoning
- 1 tsp garlic powder
- 1 tsp ground cumin
- 8 oz tomato sauce
- 28 oz crushed tomatoes
- 10 oz diced tomatoes with green chiles
Instructions
- Brown the ground beef in a large skillet over medium-high heat until fully cooked, then drain the excess fat.
- Place the cooked beef, diced sweet potatoes, black beans, diced tomatoes, onion, and minced jalapeños into the crockpot.
- Stir in the chili-lime seasoning, garlic powder, cumin, tomato sauce, crushed tomatoes, and diced tomatoes with green chiles until well combined.
- Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the sweet potatoes are fork-tender.
- Taste and adjust seasoning with additional salt or chili-lime seasoning if desired.
- Serve hot in bowls, optionally topped with sour cream, shredded cheese, or fresh cilantro.
Notes
For a deeper flavor profile, sauté your onions and jalapeños with the beef before adding them to the slow cooker. If you prefer a thicker chili, mash a few of the sweet potato chunks against the side of the pot before serving.
