  • 3 tbsp olive oil
  • 1 bell pepper
  • 1 sweet potato
  • 1/2 yellow onion
  • 1.5 cups raw cashews
  • 1 carrot
  • 1 garlic
  • 1 tbsp white miso paste
  • 2 tsp salt
  • 1 tsp pepper
  • 1 pinch cayenne
  • 1 pinch nutmeg
  • 3 tbsp nutritional yeast
  • 2 cups unsweetened soy milk
  • 16 oz pasta

Instructions

  1. Preheat oven to 400°F. Toss bell pepper, sweet potato, onion, carrot, and garlic halves with olive oil on a baking sheet. Roast 20-25 minutes until tender.
  2. Cook pasta in salted water according to package directions; drain and set aside.
  3. Squeeze roasted garlic cloves from skins. Blend roasted vegetables, cashews, miso paste, salt, pepper, cayenne, nutmeg, nutritional yeast, and soy milk until silky smooth.
  4. Toss hot pasta with the vegetable cheese sauce until evenly coated. Serve immediately.
