- 3 tbsp olive oil
- 1 bell pepper
- 1 sweet potato
- 1/2 yellow onion
- 1.5 cups raw cashews
- 1 carrot
- 1 garlic
- 1 tbsp white miso paste
- 2 tsp salt
- 1 tsp pepper
- 1 pinch cayenne
- 1 pinch nutmeg
- 3 tbsp nutritional yeast
- 2 cups unsweetened soy milk
- 16 oz pasta
Instructions
- Preheat oven to 400°F. Toss bell pepper, sweet potato, onion, carrot, and garlic halves with olive oil on a baking sheet. Roast 20-25 minutes until tender.
- Cook pasta in salted water according to package directions; drain and set aside.
- Squeeze roasted garlic cloves from skins. Blend roasted vegetables, cashews, miso paste, salt, pepper, cayenne, nutmeg, nutritional yeast, and soy milk until silky smooth.
- Toss hot pasta with the vegetable cheese sauce until evenly coated. Serve immediately.
