One-Pot Creamy Chicken and Rice
This comforting weeknight staple features tender boneless chicken breasts simmered with jasmine rice in a creamy herb-infused broth, ready in under 30 minutes for a cozy family meal.
Ingredients
- 1 lb boneless chicken breasts
- 1 cup jasmine rice
- 2 cups chicken broth
- 1/2 cup heavy cream
- 2 cloves garlic
- 1 medium onion
- 1/2 cup parmesan cheese
- 2 tbsp fresh parsley
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Heat 1 tablespoon olive oil in a large pot over medium heat.
- Dice 1 medium onion and mince 2 cloves garlic; add to the pot and sauté for 3 minutes until softened.
- Cut 1 pound boneless chicken breasts into bite-sized pieces; add to the pot and cook for 5 minutes, stirring occasionally, until lightly browned.
- Rinse 1 cup jasmine rice under cold water; add to the pot along with 2 cups chicken broth, 1/2 cup heavy cream, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Bring to a simmer, then reduce heat to low, cover, and cook for 15 minutes without stirring, until rice is tender and liquid is absorbed.
- Stir in 1/2 cup grated Parmesan cheese until melted.
- Chop 2 tablespoons fresh parsley; sprinkle over the top and serve immediately.
