One pan 20 minute creamy orzo with chicken sausage

  • chicken sausage (i used organic sweet italian)
  • 2 cups dry orzo
  • 3 tbsp olive oil
  • 4 cups chicken broth
  • 6 garlic, minced
  • 1/2 cups canned full fat coconut milk (or heavy cream)
  • 1 cups grated parm
  • 1 spinach
  • chili flakes
  • salt
  • pepper
  • dried herbs
  • fresh basil for serving

Instructions

  1. Cook chicken sausage in pan with oil for 8 minutes.
  2. Add orzo and garlic to the pan. Add a bit more olive oil and toast the orzo for 1 minute. Add chicken broth, coconut milk, and seasonings. Bring the orzo to a boil, then cover and reduce to a simmer. Cook for 10 minutes.
  3. Add spinach and parm. Mix well and serve.
