- chicken sausage (i used organic sweet italian)
- 2 cups dry orzo
- 3 tbsp olive oil
- 4 cups chicken broth
- 6 garlic, minced
- 1/2 cups canned full fat coconut milk (or heavy cream)
- 1 cups grated parm
- 1 spinach
- chili flakes
- salt
- pepper
- dried herbs
- fresh basil for serving
Instructions
- Cook chicken sausage in pan with oil for 8 minutes.
- Add orzo and garlic to the pan. Add a bit more olive oil and toast the orzo for 1 minute. Add chicken broth, coconut milk, and seasonings. Bring the orzo to a boil, then cover and reduce to a simmer. Cook for 10 minutes.
- Add spinach and parm. Mix well and serve.
