A crunchy, orange‑flavored granola with almonds and raisins.

  • 2 tsp orange zest
  • 2 tbsp sugar
  • 4 cups old-fashioned rolled oats
  • 1.5 cups raw almonds
  • 1 tsp fine sea salt
  • 1 tsp ground cinnamon
  • 0.5 cups extra-virgin olive oil or melted coconut oil
  • 0.5 cups honey or maple syrup
  • 1 tbsp vanilla extract
  • 0.75 cups raisins

Instructions

  1. Preheat the oven to 350 °F and line a large, rimmed baking sheet with parchment paper.
  2. In a small bowl, combine the orange zest and sugar, rubbing the zest into the sugar until bright orange and fragrant.
  3. In a large mixing bowl, combine the oats, almonds, salt, cinnamon, and orange‑sugar mixture; stir to combine.
  4. Pour in the olive oil, honey, and vanilla extract, and mix well.
  5. Spread the granola onto the prepared baking sheet in an even layer and bake for 19–23 minutes, stirring halfway, until lightly golden.
  6. Allow the granola to cool, then stir in the raisins and break into chunks as needed.
  7. Store the granola in an airtight container at room temperature for 1–2 weeks, or freeze for longer storage.
