Red Pepper + Chickpea Pasta

Super easy and satisfying vegan weeknight meal

Ingredients

Ingredients

  • 1/2 box pasta
  • 1 can roasted red peppers
  • 1 can chickpeas
  • 2 tbsp nutritional yeast
  • 1 clove garlic
  • salt to taste
  • pepper to taste
  • parmesan (optional)

Instructions

  1. Bring a pot of salted water to boil, then add pasta and cook to al dente
  2. Drain the chickpeas
  3. Blend the roasted red peppers, nutritional yeast, garlic, salt, and pepper to a blender and pour into a large saucepan over medium heat. Adjust seasonings as needed
  4. Add the chickpeas to the saucepan and stir, then add the pasta
  5. Serve!

Notes

For a cheesier sauce, increase the nutritional yeast or add in Parmesan cheese. Any pasta works, but I really like cavatappi because it’s thicker and the shape makes it easier to eat the chickpeas + pasta together instead of having to scoop each separately. Really great for leftovers!
