Red Pepper + Chickpea Pasta
Super easy and satisfying vegan weeknight meal

- 1/2 box pasta
- 1 can roasted red peppers
- 1 can chickpeas
- 2 tbsp nutritional yeast
- 1 clove garlic
- salt to taste
- pepper to taste
- parmesan (optional)
Instructions
- Bring a pot of salted water to boil, then add pasta and cook to al dente
- Drain the chickpeas
- Blend the roasted red peppers, nutritional yeast, garlic, salt, and pepper to a blender and pour into a large saucepan over medium heat. Adjust seasonings as needed
- Add the chickpeas to the saucepan and stir, then add the pasta
- Serve!
Notes
For a cheesier sauce, increase the nutritional yeast or add in Parmesan cheese. Any pasta works, but I really like cavatappi because it’s thicker and the shape makes it easier to eat the chickpeas + pasta together instead of having to scoop each separately. Really great for leftovers!
