Garlic Butter Steak Bites

- 1.5 lb steak (sirloin or ribeye)
- 4 tbsp unsalted butter
- 4 garlic cloves
- 4 cups fresh spinach
- 2 tbsp olive oil

Instructions
- Cut the steak into 1-inch bite-sized pieces and season generously with salt and pepper.
- Mince the garlic cloves.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the steak bites to the skillet in a single layer and sear for 2-3 minutes per side until browned; work in batches if needed and remove to a plate.
- In the same skillet, melt the butter over medium heat, then add the minced garlic and cook for 1 minute until fragrant.
- Return the steak bites to the skillet and toss to coat in the garlic butter sauce, cooking for 1-2 more minutes.
- In a separate skillet, heat the remaining 1 tablespoon of olive oil over medium heat.
- Add the fresh spinach and sauté for 2-3 minutes until wilted, seasoning with salt and pepper to taste.
- Serve the garlic butter steak bites alongside the sautéed spinach.
