Tender steak bites seared in a rich garlic butter sauce, served with sautéed spinach for a quick, flavorful weeknight dinner that's ready in under 30 minutes.

  • 1.5 lb steak (sirloin or ribeye)
  • 4 tbsp unsalted butter
  • 4 garlic cloves
  • 4 cups fresh spinach
  • 2 tbsp olive oil
  • to taste salt
  • to taste black pepper

Instructions

  1. Cut the steak into 1-inch bite-sized pieces and season generously with salt and pepper.
  2. Mince the garlic cloves.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  4. Add the steak bites to the skillet in a single layer and sear for 2-3 minutes per side until browned; work in batches if needed and remove to a plate.
  5. In the same skillet, melt the butter over medium heat, then add the minced garlic and cook for 1 minute until fragrant.
  6. Return the steak bites to the skillet and toss to coat in the garlic butter sauce, cooking for 1-2 more minutes.
  7. In a separate skillet, heat the remaining 1 tablespoon of olive oil over medium heat.
  8. Add the fresh spinach and sauté for 2-3 minutes until wilted, seasoning with salt and pepper to taste.
  9. Serve the garlic butter steak bites alongside the sautéed spinach.
