- 1.5 lb multi-colored carrots
- 1/4 cup olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 2 tsp dried oregano
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Wash and trim the ends of the multi-colored carrots, then peel. If very thick, cut lengthwise
- In a large bowl, toss the carrots with olive oil, salt, pepper, garlic powder, and oregano until evenly coated.
- Spread the carrots in a single layer on the prepared baking sheet.
- Roast in the preheated oven for 30-45 minutes, flipping halfway through, until tender and slightly caramelized at the edges.
- Remove from the oven and serve hot as a side dish.
