Vibrant multi-colored carrots are roasted to caramelized perfection with a generous coating of olive oil and bold seasonings, highlighting the natural sweetness and earthiness of the root vegetable.

  • 1.5 lb multi-colored carrots
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 2 tsp dried oregano

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash and trim the ends of the multi-colored carrots, then peel. If very thick, cut lengthwise
  3. In a large bowl, toss the carrots with olive oil, salt, pepper, garlic powder, and oregano until evenly coated.
  4. Spread the carrots in a single layer on the prepared baking sheet.
  5. Roast in the preheated oven for 30-45 minutes, flipping halfway through, until tender and slightly caramelized at the edges.
  6. Remove from the oven and serve hot as a side dish.
