  • pitted olives (any kind you like; the post used mina green olives)
  • olive oil
  • large cloves of garlic
  • preserved lemons (or fresh lemons)
  • fresh thyme
  • 16 oz fresh feta cheese
  • 1/2 cup olive oil (for the feta mixture)
  • 1/3 cup honey (add more for sweeter, less for saltier)

Instructions

  1. Prep the Olives: Add pitted olives to a baking dish. Cover with olive oil and add: • Large cloves of garlic • Preserved lemons (or fresh) • Fresh thyme
  2. Roast: Roast at 350°F (177°C) for 30 minutes.
  3. Make the Whipped Feta: While the olives roast, add to a food processor: • 16 ounces of fresh feta cheese • 1/2 cup olive oil • 1/3 cup honey (adjust to taste) Blend on high until the cheese becomes completely smooth.
  4. Assemble: Spread the whipped feta onto a plate. Top with a drizzle of olive oil, the roasted olives, and fresh thyme.
  5. Serve: Enjoy with pita bread or crostinis.
