Peanut Ginger Tofu
Tofu soaked in a bright ginger peanut sauce enriched with creamy peanut butter, perfect for a quick weeknight dinner.

- 14 oz extra‑firm tofu
- 3 tbsp creamy peanut butter
- 1 tbsp fresh ginger, grated
- 1 tsp garlic, minced
- 1 tbsp maple syrup or honey
- 1 tbsp lime juice
- 2 tbsp soy sauce
- 3 tbsp warm water
- 2 tbsp scallions, sliced
- 1 tbsp toasted sesame seeds
- 1 tbsp fresh cilantro, chopped (optional)
Instructions
- Press the tofu to remove excess moisture, then cut into 1‑inch cubes.
- Whisk together peanut butter, ginger, garlic, maple syrup, lime juice, tamari, and water until smooth.
- Pour the peanut ginger sauce over the tofu cubes and let soak for at least 15 minutes, stirring occasionally to coat evenly.
- Sprinkle with scallions, cilantro, and toasted sesame seeds before serving.
- Serve chilled or at room temperature over rice or noodles, drizzling any extra sauce from the bowl.
Notes
Pressing tofu ensures a crisp exterior. Adjust water in the sauce to reach your desired consistency; add more for a thinner glaze or less for a richer coating.
