Peanut Ginger Tofu

Tofu soaked in a bright ginger peanut sauce enriched with creamy peanut butter, perfect for a quick weeknight dinner.

  • 14 oz extra‑firm tofu
  • 3 tbsp creamy peanut butter
  • 1 tbsp fresh ginger, grated
  • 1 tsp garlic, minced
  • 1 tbsp maple syrup or honey
  • 1 tbsp lime juice
  • 2 tbsp soy sauce
  • 3 tbsp warm water
  • 2 tbsp scallions, sliced
  • 1 tbsp toasted sesame seeds
  • 1 tbsp fresh cilantro, chopped (optional)

Instructions

  1. Press the tofu to remove excess moisture, then cut into 1‑inch cubes.
  2. Whisk together peanut butter, ginger, garlic, maple syrup, lime juice, tamari, and water until smooth.
  3. Pour the peanut ginger sauce over the tofu cubes and let soak for at least 15 minutes, stirring occasionally to coat evenly.
  4. Sprinkle with scallions, cilantro, and toasted sesame seeds before serving.
  5. Serve chilled or at room temperature over rice or noodles, drizzling any extra sauce from the bowl.

Notes

Pressing tofu ensures a crisp exterior. Adjust water in the sauce to reach your desired consistency; add more for a thinner glaze or less for a richer coating.
