White Bean Dip

Creamy, zesty white bean dip with fresh lemon, garlic, and herbs, blended smooth for serving with veggies or pita.

  • 1½ cups cooked cannellini beans (drained and rinsed)
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp fresh lemon juice
  • ½ tsp lemon zest
  • 1 small garlic clove
  • ½ tsp sea salt
  • freshly ground black pepper
  • 2 to 4 tbsp water (if needed)
  • 2 tbsp torn fresh basil leaves
  • 2 tsp chopped fresh rosemary leaves

Instructions

  1. In a food processor, pulse the cannellini beans, olive oil, lemon juice and zest, garlic, salt, and several grinds of pepper until combined.
  2. If the bean dip is too thick, slowly add the water with the food processor running.
  3. Process until smooth.
  4. Blend in the basil and/or rosemary, if desired.
  5. Serve with veggies or pita.
