Banana Pudding

- 4 egg yolks
- 2 cups whole milk
- 1/3 cups sugar
- 1/4 cups cornstarch
- 1 tsp vanilla
- 1/4 cups butter
- 1 cups heavy cream
- 1/4 cups sugar
- 4 bananas
- 1 mini vanilla wafers
Instructions
- Whisk sugar, cornstarch, and egg yolks together.
- Slowly add the boiling milk while whisking to temper the eggs.
- Cook over low heat until the mixture is bubbly and thickened.
- Stir in the vanilla and cold butter cubes until fully incorporated.
- Pour the custard into a bowl, cover with plastic wrap touching the surface, and cool in an ice bath or refrigerator.
- Once cooled, whip heavy cream and the remaining sugar to soft peaks.
- Fold the cooled custard into the whipped cream.
- Slice the bananas and fold them into the custard mixture.
- Add the mini vanilla wafers and gently fold them in.
- Transfer to a trifle bowl or storage container and refrigerate for about two hours to set.
- Serve topped with extra cream, bananas, and cookies, or add a scoop to matcha.
