Ingredients
Chicken
- 2 lb minced chicken
- 10 mini tortillas
- salt and pepper to taste
- oil for cooking
Caesar Dressing
- 1 cups mayonnaise
- 2 tsp dijon mustard
- salt, to taste
- 3 tbsp olive oil
- 1 tsp worcestershire sauce
- 2 tsp lemon juice
- 2-3 garlic, freshly minced
- 1 tsp black pepper
Caesar Salad
- 1 large romaine lettuce, diced
- 1/3 cups parmesan cheese, shredded or shaved
- 1 cups croutons
Instructions
- Divide the minced chicken into 10 equal portions. Place 2-3 tablespoons of ground chicken in the center of each tortilla, pressing down gently to create an even layer. Sprinkle with salt and black pepper.
- Heat a skillet over high heat with a small amount of oil. Place the tortillas, meat side down, in the skillet and cook over medium-low heat for 2-3 minutes or until cooked through. Flip the tacos and cook the other side until crispy and golden.
- In a bowl, whisk together mayonnaise, Dijon mustard, Worcestershire sauce, lemon juice, garlic, salt, and black pepper. Slowly pour in olive oil while whisking until the dressing is smooth and emulsified.
- Once the tacos are cooked, top each taco with diced romaine lettuce, shaved parmesan cheese, and croutons. Drizzle the Caesar dressing over the top of each taco.
- Serve the Chicken Caesar Smash Tacos immediately and enjoy!
