- 6 (1-inch thick) bone-in pork chops
- 1 1/2 tsp kosher salt
- 3/4 tsp black pepper
- 3 cloves, minced garlic
- 1 1/2 tbsp, chopped fresh rosemary
- 1 1/2 tsp, chopped fresh thyme
- 3 tbsp olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- Pat the pork chops dry with paper towels and season both sides generously with salt, black pepper, minced garlic, chopped fresh rosemary, and thyme.
- Heat 3 tablespoons of olive oil in a large oven-safe skillet over medium-high heat.
- Sear the pork chops for 3-4 minutes per side until golden brown.
- Transfer the skillet to the preheated oven and roast for 10-15 minutes, or until the internal temperature reaches 145°F (63°C).
- Remove from the oven and let the pork chops rest for 5 minutes before serving.
- Serve alongside roasted root vegetables for a hearty winter dinner.
