Classic Cheese Blintzes with Homemade Strawberry Jam
Delicate, thin crepes filled with a creamy, sweetened cheese mixture and topped with a vibrant, quick-cooked strawberry jam.
Ingredients
Crepe Batter
- 1 cups all-purpose flour
- 1.5 cups milk
- 3 large eggs
- 1 tbsp sugar
- 0.25 tsp salt
Cheese Filling
- 8 oz ricotta cheese
- 4 oz cream cheese
- 2 tbsp sugar
- 1 large egg yolk
- 1 tsp vanilla extract
Strawberry Jam
- 2 cups fresh strawberries, hulled and sliced
- 0.25 cups sugar
- 1 tsp lemon juice
Instructions
- Whisk flour, milk, eggs, sugar, and salt in a bowl until smooth; let the batter rest for 20 minutes.
- Combine ricotta, cream cheese, sugar, egg yolk, and vanilla in a bowl until smooth for the filling.
- Heat a non-stick skillet over medium heat and lightly grease with butter.
- Pour a small ladle of batter into the pan, swirling to coat thinly; cook until edges lift, then flip briefly to set.
- Repeat until all batter is used, stacking crepes on a plate.
- Place a spoonful of cheese filling in the center of each crepe, fold in the sides, and roll up tightly.
- Simmer strawberries, sugar, and lemon juice in a small saucepan over medium heat until thickened, about 10 minutes.
- Sear the rolled blintzes in a buttered pan until golden brown on all sides.
- Serve warm, topped generously with the homemade strawberry jam.
Notes
For the smoothest filling, ensure your cream cheese and ricotta are at room temperature before mixing. You can make the crepes a day in advance and store them between sheets of parchment paper.
