Ginger Garlic Chicken Stir-Fry
A quick weeknight stir-fry featuring tender chicken breast with crisp low-carb vegetables and aromatic Asian spices for a flavorful, satisfying main course.

- 1 lb chicken breast
- 2 cups broccoli
- 1 medium bell peppers
- 2 tbsp ginger
- 4 cloves garlic
- 1/4 cup soy sauce
- 1 tbsp sesame oil
- 2 stalks green onions
- 2 tbsp vegetable oil
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Slice the chicken breast into thin strips and season with a pinch of salt and pepper; set aside.
- Chop the broccoli into florets, slice the bell peppers into thin strips, mince the ginger and garlic, and chop the green onions; set aside.
- Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.
- Add the chicken strips and stir-fry for 4-5 minutes until browned and cooked through; remove from the pan and set aside.
- Add the remaining 1 tablespoon of vegetable oil to the pan, then toss in the broccoli and bell peppers; stir-fry for 3-4 minutes until crisp-tender.
- Stir in the minced ginger and garlic, cooking for 1 minute until fragrant.
- Return the chicken to the pan, pour in the soy sauce and sesame oil, and stir everything together for 2 minutes to coat evenly.
- Remove from heat, garnish with chopped green onions, and serve immediately.
