Ginger Garlic Chicken Stir-Fry

A quick weeknight stir-fry featuring tender chicken breast with crisp low-carb vegetables and aromatic Asian spices for a flavorful, satisfying main course.

  • 1 lb chicken breast
  • 2 cups broccoli
  • 1 medium bell peppers
  • 2 tbsp ginger
  • 4 cloves garlic
  • 1/4 cup soy sauce
  • 1 tbsp sesame oil
  • 2 stalks green onions
  • 2 tbsp vegetable oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Slice the chicken breast into thin strips and season with a pinch of salt and pepper; set aside.
  2. Chop the broccoli into florets, slice the bell peppers into thin strips, mince the ginger and garlic, and chop the green onions; set aside.
  3. Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.
  4. Add the chicken strips and stir-fry for 4-5 minutes until browned and cooked through; remove from the pan and set aside.
  5. Add the remaining 1 tablespoon of vegetable oil to the pan, then toss in the broccoli and bell peppers; stir-fry for 3-4 minutes until crisp-tender.
  6. Stir in the minced ginger and garlic, cooking for 1 minute until fragrant.
  7. Return the chicken to the pan, pour in the soy sauce and sesame oil, and stir everything together for 2 minutes to coat evenly.
  8. Remove from heat, garnish with chopped green onions, and serve immediately.
