Crispy Chicken Tacos

Crispy folded tacos with zesty marinated chicken, topped with fresh salsa and a lime crema.

Ingredients

Chicken Marinade

  • 1.5 lb chicken thighs, cubed into small pieces
  • 1/4 cup olive oil
  • 1.5 limes, juiced
  • 2 tsp minced garlic
  • 2 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp chili powder
  • 1 tsp dried oregano
  • salt and pepper to taste

Filling

  • 1 small red onion, finely chopped
  • 2 tbsp cilantro, chopped
  • 1 lime, juiced
  • to taste salt and pepper

Crema

  • 1 cup sour cream (or greek yogurt)
  • 1 lime, juiced
  • 1 tsp sugar

Assembly

  • 8 small flour tortillas (or corn)
  • 1 cup shredded cheese

Instructions

  1. Dice the chicken, add to bowl with all marinade ingredients combined - marinade as long as desired
  2. Prepare the filling and the crema by mixing all ingredients in their respective bowls
  3. Cook chicken on high heat until done, then remove from pan
  4. Turn heat down slightly, add tortillas to pan (add more oil if needed) and sprinkle with cheese + chicken - fold and cook until crispy on both sides
  5. Plate tacos, open slightly and add filling, serve with crema

Notes

Marinate the chicken for at least 15 minutes for best flavor; it can be marinated up to 24 hours in the fridge for deeper taste. The marinade adds moisture, so no additional oil is typically needed for cooking, but add if the pan dries out.
