Sweet potato clusters
Crispy sweet‑potato clusters made in an air fryer – no traditional oven needed. From m1chslee on Instagram.
Ingredients
Ingredients
- 1 medium (or 2 small) sweet potato (medium) or 2 small ones (about 300g)
- 2 tbsp tapioca or corn starch
- 1 egg
- black sesame (for garnish)
- salt
- honey
Instructions
- Peel the skin and dice the sweet potato into cubes; the smaller the cubes, the better.
- Mix the sweet potatoes in a bowl with the egg, corn starch, and a pinch of salt until well coated.
- Line a tray with parchment paper and shape the mixture into flat round circles, avoiding piles that are too high or thick.
- Sprinkle some black sesame seeds over the circles.
- Air‑fry at 350 °F (175 °C) for 15–20 minutes, adjusting for your appliance.
- Remove and brush the clusters with honey.
- Return to the air fryer (or use the toaster setting) for about 10 more minutes to crisp them up.
- Let cool on a wire rack before serving.
