Salmon and Edamame Rice Bowl

- 250 g salmon fillet
- 125 g cooked white rice

- 150 g edamame
- 0.5 whole avocado
- 1 stalk green onion, chopped
Instructions
- Season the salmon fillet with salt and pepper to taste.
- Heat a pan over medium-high heat and sear the salmon until cooked through, then flake into bite-sized pieces.
- Thinly slice the cucumbers and dice the red onion.
- In a large mixing bowl, combine the cooked white rice, flaked salmon, sliced cucumber, diced red onion, and edamame.
- Drizzle the chili oil, sesame oil, and soy sauce over the mixture.
- Add the diced avocado and chopped green onions.
- Toss everything gently until well combined and serve immediately.
Notes
Use pre-cooked or leftover rice to make this meal come together even faster. For extra texture, add a sprinkle of toasted sesame seeds or furikake on top.
