Salmon and Edamame Rice Bowl

A refreshing and nutritious bowl featuring flaky pan-seared salmon, crisp cucumber, and protein-packed edamame tossed in a savory sesame-chili dressing.

  • 2 large cucumber
  • 0.25 cup red onion, diced
  • 250 g salmon fillet
  • 125 g cooked white rice
  • 1 tsp chili oil
  • 0.5 tsp sesame oil
  • 0.5 tbsp soy sauce
  • 150 g edamame
  • 0.5 whole avocado
  • 1 stalk green onion, chopped

Instructions

  1. Season the salmon fillet with salt and pepper to taste.
  2. Heat a pan over medium-high heat and sear the salmon until cooked through, then flake into bite-sized pieces.
  3. Thinly slice the cucumbers and dice the red onion.
  4. In a large mixing bowl, combine the cooked white rice, flaked salmon, sliced cucumber, diced red onion, and edamame.
  5. Drizzle the chili oil, sesame oil, and soy sauce over the mixture.
  6. Add the diced avocado and chopped green onions.
  7. Toss everything gently until well combined and serve immediately.

Notes

Use pre-cooked or leftover rice to make this meal come together even faster. For extra texture, add a sprinkle of toasted sesame seeds or furikake on top.
