Fresh Mango, Black Bean, and Corn Salad
A vibrant, refreshing salad featuring sweet mango, creamy avocado, hearty black beans, and crisp corn tossed in a light dressing.

- 15 oz black beans, canned and rinsed
- 1.5 cups sweet corn kernels, cooked or canned
- 1 large ripe mango, peeled and cubed
- 1 large ripe avocado, cubed
- 2 tbsp fresh lime juice
- 1 tsp salt
- 1 tsp trader joe’s everything but the elote seasoning
Instructions
- Rinse and drain the black beans thoroughly.
- Cut the mango into bite-sized cubes.
- Dice the avocado into chunks similar in size to the mango.
- Combine the black beans, corn, mango, and avocado in a large mixing bowl.
- Drizzle with lime juice and olive oil, and seasonings.
- Toss gently to combine, being careful not to mash the avocado.
- Serve immediately or chill for 30 minutes to allow flavors to meld.
