  1. Preheat your oven to 400F using the convection setting, or prepare your air fryer.
  2. Wash the small potatoes thoroughly and cut them into halves.
  3. Toss the halved potatoes with olive oil in a bowl until evenly coated.
  4. Arrange the potatoes in a single layer on a baking sheet or in the air fryer basket.
  5. Roast for 45 minutes until the skins are golden brown and crispy.
  6. Remove from the oven or air fryer and immediately toss with salt to taste before serving.

Notes

For extra crispiness, ensure the potatoes are completely dry after washing before tossing them with oil. You can add dried herbs like rosemary or thyme before roasting for extra flavor.
