Cilantro Lime Rice
This vibrant cilantro lime rice is an easy-to-make side dish that's even better than Chipotle's version, with fluffy basmati rice infused with fresh lime and cilantro flavors. It's perfect for pairing with Mexican or Asian dishes, burritos, chicken, steak, or shrimp.

- 2 tablespoons extra-virgin olive oil
- 1 1/2 cups long-grain basmati rice
- 1 clove garlic
- 2 1/2 cups water
- 1 teaspoon salt
- 1 zest of lime
- 3 tablespoons lime juice
- 1 cup, lightly packed chopped cilantro, leaves and tender stems
Instructions
- Heat the olive oil in a medium saucepan over medium-high heat. Add the uncooked basmati rice and stir to coat with the oil. Cook, stirring occasionally, until the rice starts to brown lightly, about 3-4 minutes, for a steamier texture with less browning.
- Add the minced garlic and cook for 30 seconds until fragrant.
- Stir in the water, salt, and lime zest. Bring to a rolling boil, then cover, reduce heat to low, and simmer undisturbed for 15 minutes (or per rice package instructions).
- Remove from heat and let sit, covered, for 10 minutes.
- Fluff the rice with a fork and transfer to a serving bowl.
- Drizzle with lime juice and toss gently with chopped cilantro until evenly distributed.
- Serve warm as a side with Mexican or Asian mains.
