  • 2 lb sweet potatoes
  • 2 tbsp avocado oil
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 1.5 tsp smoked paprika
  • 1 tsp garlic powder

Instructions

  1. Preheat oven to 425°F and line a rimmed baking sheet with parchment paper.
  2. Scrub 2 lb sweet potatoes and cut into uniform ¾-inch cubes for even browning.
  3. In a large bowl, toss the cubes with 2 tbsp avocado oil until evenly coated.
  4. Sprinkle 1 tsp kosher salt, ½ tsp freshly ground black pepper, 1½ tsp smoked paprika, and 1 tsp garlic powder over the potatoes.
  5. Toss vigorously until every cube is seasoned.
  6. Spread in a single layer on the prepared sheet, leaving space between pieces.
  7. Roast 25–30 minutes, flipping once halfway through, until edges are crisp and centers are creamy.
  8. Taste and adjust salt if needed, then serve immediately.

Notes

Do not overcrowd the pan; use two sheets if necessary for maximum crispiness.
