  • 1 lb sausage
  • 1 cup shredded cheddar cheese
  • 1/2 cup crushed crackers
  • 2 oz cream cheese, softened
  • 1/4 cup parmesan cheese, grated
  • 2 tbsp fresh parsley, chopped
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup milk
  • 1 tbsp olive oil
  • 1/4 tsp red pepper flakes

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment.
  2. Crumble the sausage into a large bowl.
  3. Add shredded cheddar cheese, cream cheese, grated Parmesan, and crushed crackers; mix to combine.
  4. Stir in chopped parsley, garlic powder, salt, black pepper, and red pepper flakes.
  5. Pour in milk and drizzle with olive oil; mix until the mixture just comes together—do not overwork.
  6. Chill the mixture for 15 minutes to help with binding.
  7. Scoop rounded tablespoons of the mixture and roll between your palms to form 1-inch meatballs.
  8. Arrange meatballs on the prepared sheet, spacing them evenly.
  9. Bake for 18–22 minutes, until the balls are golden and the center reaches 160°F.
  10. Let rest for 5 minutes before serving.
  11. Serve with a dipping sauce such as maple mustard or marinara.
