- 2 oz cream cheese, softened
- 1/4 cup parmesan cheese, grated
- 2 tbsp fresh parsley, chopped
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 cup milk
- 1 tbsp olive oil
- 1/4 tsp red pepper flakes
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment.
- Crumble the sausage into a large bowl.
- Add shredded cheddar cheese, cream cheese, grated Parmesan, and crushed crackers; mix to combine.
- Stir in chopped parsley, garlic powder, salt, black pepper, and red pepper flakes.
- Pour in milk and drizzle with olive oil; mix until the mixture just comes together—do not overwork.
- Chill the mixture for 15 minutes to help with binding.
- Scoop rounded tablespoons of the mixture and roll between your palms to form 1-inch meatballs.
- Arrange meatballs on the prepared sheet, spacing them evenly.
- Bake for 18–22 minutes, until the balls are golden and the center reaches 160°F.
- Let rest for 5 minutes before serving.
- Serve with a dipping sauce such as maple mustard or marinara.
