Creamy Spinach Dip
A refreshing and tangy spinach dip made with fresh baby spinach, caramelized onions, and creamy Greek yogurt, perfect for serving with veggies, crackers, or pita chips.

- 1 lb baby spinach
- 2 medium onions
- to taste salt
- to taste black pepper
- to taste garlic powder
- 2 cups greek yogurt
Instructions
- Rinse the baby spinach under cold water and pat dry with paper towels. Chop the onions finely.
- In a large skillet over medium heat, add a drizzle of olive oil (about 1 tablespoon) and sauté the chopped onions for 5-7 minutes until softened and translucent. Add the baby spinach in batches, stirring until wilted, about 3-4 minutes total. Season with salt, pepper, and garlic powder to taste. Remove from heat and let cool slightly.
- In a large mixing bowl, combine the wilted spinach-onion mixture with the Greek yogurt. Stir until well blended and creamy. Taste and adjust seasoning if needed.
- Transfer the dip to a serving bowl and refrigerate for at least 30 minutes to let flavors meld. Serve chilled with your favorite dippers.
Notes
For a dairy-free version, substitute Greek yogurt with a plant-based alternative like coconut yogurt. This dip keeps well in an airtight container in the fridge for up to 3 days.
