Cinnamon Roll Pancakes
Banana, cinnamon, oat flour pancakes. Gluten-free. Note: Can half the recipe for smaller portion.

- 1 medium ripe banana, mashed
- 1/2 cup plain skyr or greek yogurt
- 2 large eggs
- 1/2 cup oat flour (or blend rolled oats until fine)
- 2 tbsp almond flour (optional, for extra softness)
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp vanilla extract
- pinch salt
- greek yogurt or cream cheese mixed with cinnamon & a drizzle of maple syrup or honey
Instructions
- In a bowl, whisk the mashed banana, greek yogurt, eggs, and vanilla until smooth.
- Add oat flour, almond flour, baking powder, cinnamon, and salt. Mix just until combined — the batter should be thick but pourable.
- Heat a nonstick pan over medium heat and lightly grease it. Cook until golden, about 1–2 minutes per side.
- Stack the pancakes and top with yogurt, cinnamon, maple syrup.
