Healthy Almond Flour Banana Oat Muffins

- 3 ripe bananas
- 3/4 cup unsweetened almond milk
- 2 tbsp nut butter (almond or peanut)
- 1 tbsp melted coconut oil or olive oil
- 1 cup almond flour
- 1 cup oats (rolled)
- 1 tsp baking soda
- 1 tsp baking powder
- 2 eggs
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a 12-cup muffin tin with coconut oil or olive oil.
- In a large bowl, mash 3 ripe bananas until smooth.
- Add the almond milk, nut butter, melted coconut oil, eggs, and vanilla extract to the mashed bananas, whisking until well combined.
- In a separate bowl, mix the almond flour, oats, baking soda, baking powder, cinnamon, and salt.
- Stir the dry ingredients into the wet mixture until just combined; do not overmix.
- Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.
- Bake for 22-25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
