Healthy Almond Flour Banana Oat Muffins

  • 3 ripe bananas
  • 3/4 cup unsweetened almond milk
  • 2 tbsp nut butter (almond or peanut)
  • 1 tbsp melted coconut oil or olive oil
  • 1 cup almond flour
  • 1 cup oats (rolled)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 12-cup muffin tin with coconut oil or olive oil.
  2. In a large bowl, mash 3 ripe bananas until smooth.
  3. Add the almond milk, nut butter, melted coconut oil, eggs, and vanilla extract to the mashed bananas, whisking until well combined.
  4. In a separate bowl, mix the almond flour, oats, baking soda, baking powder, cinnamon, and salt.
  5. Stir the dry ingredients into the wet mixture until just combined; do not overmix.
  6. Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.
  7. Bake for 22-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
