Easy Apple Cinnamon Muffins

45m
6 servings

These apple cinnamon muffins are an easy treat to make when you have an abundance of fall apples! I like to use a combination of tart Granny Smith with sweet Honeycrisp or Gala for a well-rounded flavor. These muffins will make your kitchen smell amazing!

Ingredients

Apple Muffins

  • 1 ¾ cups all-purpose flour
  • ¾ cups white sugar
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • 1 egg
  • ⅓ cups vegetable oil
  • ⅓ cups milk
  • 2 apples

Topping

  • ½ cups white sugar
  • ½ cups all-purpose flour
  • ⅓ cups butter
  • 1 ½ tsp ground cinnamon

Instructions

  1. Gather the ingredients. Preheat the oven to 425 degrees F (220 degrees C). Line 6 large muffin cups with paper muffin liners.
  2. To make the muffins: Stir flour, sugar, baking powder, cinnamon, and salt together in a large bowl. Mix in egg, oil, and milk until just combined. Fold in chopped apples.
  3. Spoon ½ cup of batter into each muffin liner.
  4. To make the streusel topping: Mash sugar, flour, butter, and cinnamon in a small bowl until mixture begins to cling together. Sprinkle topping evenly over unbaked muffins, pressing lightly to adhere.
  5. Bake in the preheated oven for 5 minutes. Reduce oven temperature to 350 degrees F and bake until a toothpick inserted into the center of a muffin comes out clean, 25 to 30 minutes. Let cool in pan for 5 minutes; transfer muffins to a wire rack to cool completely.
